Huevos Rancheros

A ranchers favorite that city folks will love, this Huevos Rancheros recipe delivers a hearty breakfast.

  • 2 large eggs
  • 1/2 tablespoon butter, or avocado oil
  • 2 white or yellow corn tortillas, 6-inch round
  • 1/4 cup refried beans, or mashed pinto or black beans
  • 2 tablespoons salsa fresca, or use Pico de Gallo or salsa Verde
  • Optional – 1/4 cup queso fresco, crumbled
  • Optional Garnish – avocado and fresh cilantro leaves


  • Heat skillet over medium heat. Warm tortillas one at a time, on both sides. Place warm tortillas on a plate or in a small cast-iron skillet. Warm refried beans in skillet. Spread on tortillas.
  • In the meantime, warm butter in a small frying pan over medium heat. Crack eggs into pan and cook sunny side up. Place cooked eggs on top of refried beans. Add salt and pepper, to taste.
  • Top huevos rancheros with salsa fresca, Pico de Gallo or salsa Verde. Optional – add queso fresca, diced avocado, and chopped cilantro leaves.
