Heat skillet over medium heat. Warm tortillas one at a time, on both sides. Place warm tortillas on a plate or in a small cast-iron skillet. Warm refried beans in skillet. Spread on tortillas.
In the meantime, warm butter in a small frying pan over medium heat. Crack eggs into pan and cook sunny side up. Place cooked eggs on top of refried beans. Add salt and pepper, to taste.
Top huevos rancheros with salsa fresca, Pico de Gallo or salsa Verde. Optional - add queso fresca, diced avocado, and chopped cilantro leaves.
